Sugar was one of the major exports of the island of Cyprus during the middle ages and the island's welth and prosperity owed much to the trade in this commodity. Archival records provide us with extensive information concerning the cultivation fo sugar-cane, the sugar plantations and theprocessing and production of sugar as well as the sugar mills located on the island. The ruins of three medieval sugar mills have survived in Cyprus and are being systematically excavated. They are at Kouklia ''Stavros'', Kolossi and Episkopi ''Serayia''.
